Intense white wine with plenty of fruity in the nose in the form of lime, grapefruit and a little gumboot. In the mouth, one immediately meets with a marked acidity, flinted minerality and white pepper in addition to the aforementioned fruit notes. The structure is full-bodied and slightly creamy, but the mouth is left clean and refreshed thanks to the acidity and the very pure expression that the wine possesses. A serious glass of wine that will be good for oysters or sushi because of its intense minerality. 91 points, Guia Peñin
Production:
Grape selection taking into account the vineyard’s age and type of soil. Prefermentative maceration at cold temperatures (8ºC – 12ºC) for 4-8 hours in order to get the fullest aromas extraction. Fermentation at a controlled temperature (16ºC) for 10-15 days. The wine is then stirred together with its own lees in order to achieve the characteristic smoothness and persistence of this wine.
