Cassis, Complex, Powerfull As befits a Pauillac, this wine is dominated by Cabernet Sauvignon. The wine is both rich and structured, benefiting from the 2016 vintage. Black-currant fruits and ripe tannins come together well. To drink now but perfect if you wait until 2021!
TERROIR
The terroir is presented as a vast plan which culminates in the west and slopes gently towards the estuary. It is characterized by a perfect match between very pure gravelly ridges and a basement consisting of deep alios.
The vines thus benefit from an ideal drainage and irrigation system. Their good rooting as well as the extreme permeability of the soil allows them to resist both drought and excess humidity.
2016 VINTAGE
The mild winter and spring of 2016 were followed by a fairly dry summer.
The rains in early September allowed the grapes to reach perfect maturity and to harvest in the best conditions.
In addition, the presence on the ground and the know-how of oenologists Baron Philippe de Rothschild have helped to optimize and guarantee a great vintage.
It is characterized in particular by excellent very fruity Merlots and by powerful and very ripe Cabernets.
WINEMAKING
The selected plots are monitored throughout their vegetative cycle by the oenologists of Baron Philippe de Rothschild who advise producers on the management of their vines according to the quality requirements for Mouton Cadet Réserve.
MATURING
Duration: 18 to 24 months
BLENDING NOTES
Merlot: 31% - Aromas of red fruits.
Cabernet Sauvignon: 59% - Structure and power.
Cabernet Franc: 8% - Finesse and elegance.
Petit Verdot: 2% - Tannic structure.
TASTING NOTES
ASPECT: Deep garnet with light purple hues.
NOSE: The first nose reveals notes of roasted coffee and blackcurrant. The ventilation gives way to a lot more complexity with a sweet blend of vanilla, blackberry and truffle, then brandy cherry.
TASTE: The attack is frank thanks to tannins which stand out for their elegance and their power. The middle on the palate, the fruit (blackcurrant) and roasted coffee express themselves. The finish is very nice with a quality of tannins synonymous with exceptional terroir.
PAIRING SUGGESTIONS
Roasted leg of lamb, porcini croquettes, Saint-Nectaire.
