Blanc 2008 - Cuvée Prestige
Because of their low yield the “Semillon” grapes reach the height of their maturity before being picked and destemmed. The grapes are then pressed by direct pressing and the setting of the must done at a low temperature. The juice is fermented in new oak casts at 18° to 20°C for a period of 8 to 10 days. These very best “Semillon” is the selected to be aged on the lies and stirred regularly over a period of 9 months. This “Prestige white” is rich, robust and supple enough to harmonise beautifully with a truffle omelette or foie gras.
Recommended temperature for serving: 12° - 13°C.
